Does anyone have any good sources for 14th-15th Century dance styles during in Germany/France? I am interested in Court dancing and maybe some peasant festive dances.

The Basse Dance Project is the closest I can get you on court dance styles from the time period & area you're interested in. (There are more court dances from 15th century Italy, but I wasn't sure if you would be interested in those.)

There aren't records of specific dances done by peasants of that time, AFAIK, but one can deduce (from the iconography of the era) what sorts of dances would have been done, like the dancing shepherds & shepherdesses in the Book of Hours of Charles d'Angouleme. (Likewise, there are examples of what might have been "court dances" or "peasant dances" in some of the illos in Bodley 264, the Luttrell Psalter, etc.)
