Panther Pavilion is my prefered. Their regent is a good choice for single man setup.
Tentsmith is also highly rated.
I think there is a company called Period Pavilions as well. They do an interior steel frame with a canvas tent cover that looks period from the outside but is easier to set up.
Do a goodle search for Pavilions and you will find many.

Depends on what you mean by "In a Pinch". I have set up a 12ft by 18ft by 10ft high panther rectangular many times by myself. Its more time consuming that way, but its a better workout to pound all those stakes yourself! The tent belongs to a friend who doesn't play much but still lets us use it anytime we want to haul it out of his basement. Had no troubles with it whatsoever in the past 4 or so years.
Here's a caution about Tentmasters. I love their product when they get it right but when I dealt with them many years ago they were disorganized, showed poor quality control, and were very late in delivery.
Out of four of us that ordered custom tents, all four orders had some serious flaws or mistakes (i.e. parts left out, ties left off, ties or parts put on wrong). And all four orders were delivered months past the promised delivery times.
Ultimately, Tentmasters made good on all promises, but the grief and frustration it placed upon us was considerable.
