Black swan designs sell a lovely version of a mahoitred doublet. www.historicenterprises.com
Here is an old image I have of a doublet pattern, no ball shoulders. Today I don't use the curved shape on the neck/back area I use a triangular shape with a stright line:

The Medieval Tailors Assistant has a good pattern that is similar to the one I made.

Can't vouch for its accuracy, but you could look at http://www.nachtanz.org/SReed/doublets.html

It's not really armour if you haven't bled on it.
